I have been on a political slant the last few posts, but I haven't turned CSPAN on yet today and want to talk about something we all love. MUNCHIES! I love my salty and my sweets and when I can combine them I am in heaven, a treat that hits two different taste zones of the tongue is beyond pure joy. French fries dipped in a frosty from Wendy's, Honey glazed chicken, or cinnamon/sugar on toast with salted butter. MMMM! I found a new one on the net and wish I could remember where so I could give proper credit, It is an old recipe that seems to span generations, so I had to try it, and I did in several different variations.
The basics:
popcorn (I used butter lovers :-))
1/2 cup sugar
1/2 cup honey or corn syrup
1 tsp vanilla
The Add-ins (choose one or more totalling 1/2 cup)
cup peanut butter
milk chocolate chips
white chocolate chips
Reese's Peanut Butter chips
or any other chip that will melt in the hot sugar.
You could also add peanuts, cashews, etc as well as the sweet stuff.
The directions:
Pop the popcorn (2 bags of microwave corn is about the right amount)
Remove the un-popped kernels and place popped corn into a glass or stainless bowl (plastic would be a bad thing here)
Add the sugar, and honey into a heavy bottom sauce pot and bring to a rolling boil, stir the mixture in the beginning to ensure it is all combined.
Boil for 2-3 minutes and remove from heat
Add the vanilla and add-in of choice, stir until melted and evenly combined
Pour over popcorn and gently fold it in to evenly coat all the popped kernels.
Let cool (if you can) and then eat.
This whole process really only takes 10 minutes tops, and is so worth it.

OK.. I didn't end up making cheesecakes this weekend. I hope your was good. I'll have to try out your popcorn..
